Maca Super Waffles
Hearty buckwheat waffles made with Gelatinized Tri-Color Maca, protein powder, chia seeds, nuts, and pumpkin seeds, then topped with yogurt, blueberries, and sorghum syrup.

Ingredients
For the Waffles
- 1 tablespoon oil
- 1 egg
- 1/4 teaspoon vanilla
- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 heaping tablespoon Maca Team Premium Gelatinized Tri-Color Maca powder
- 1 scoop protein powder
- 1 scoop green powder
- 3/4 cup buckwheat flour
- 1 tablespoon chia seeds
- Handful of chopped walnuts
- Handful of chopped pecans
- Handful of pumpkin seeds
- Almond milk, as needed to reach desired batter consistency
For the Topping
- Plant-based butter
- Plant-based yogurt
- Blueberries
- Sorghum syrup
Instructions
- Preheat your waffle iron.
- Combine the oil, egg, vanilla, baking powder, cinnamon, Maca powder, protein powder, green powder, buckwheat flour, and chia seeds.
- Add enough almond milk to reach your preferred waffle-batter consistency.
- Stir in the chopped walnuts, pecans, and pumpkin seeds after the initial mixture is combined.
- Scoop the batter onto the preheated waffle iron and close the lid.
- Cook according to your waffle iron. Because this is a dense batter, it may require two cooking cycles to cook through completely.
- When finished, carefully remove the waffle and transfer it to a warm plate.
- Top with plant-based butter and yogurt, add a generous amount of blueberries, and drizzle with sorghum syrup.
- Serve warm and enjoy.
Cooking tip: This batter is denser than a traditional waffle batter because of the buckwheat flour, protein powder, seeds, and nuts. Depending on your waffle maker, give the waffles additional cooking time if needed so the centers cook through.
