What Does Raw Black Maca Mean?

Raw black maca is made from black maca roots that are dried and processed without being exposed to temperatures above 105°F / 40°C.

After harvest, our black maca roots are traditionally dried in the Andean sun. They are then cleaned, milled and processed while remaining below the temperature threshold we use for our raw maca.

Unlike gelatinized maca, raw black maca does not go through a separate pre-cooking step to remove starch. It therefore retains more of the root’s natural starch along with the characteristics of maca in its raw form.

For people with normal to strong digestion, raw maca can be an excellent way to use traditionally prepared maca. People who are sensitive to starch or who have found raw maca difficult to digest may prefer a gelatinized product instead.

Raw Black Maca vs. Gelatinized Black Maca

Both raw black maca and gelatinized black maca begin with 100% black maca roots. The main difference is how they are processed after drying.

  • Gelatinized Black Maca is pre-cooked at about 160°F / 70°C to remove most of its natural starch.

Raw maca retains more heat-sensitive nutrients and the characteristics associated with an uncooked preparation. Gelatinized maca is easier for many people to digest because much of the starch has been removed.

Neither is automatically better for everyone. If you have normal to strong digestion and specifically want maca in a raw form, Raw Black Maca may be the better fit. Our raw black maca begins with black maca roots grown near Junín, Peru, in the high Andes.

After harvest, the roots are spread out and traditionally dried in the mountain sun. This gradual drying process prepares the roots for storage and milling while preserving the traditional preparation used for maca in Peru.

Once dried, the roots are cleaned and processed while remaining below 105°F / 40°C. They are then milled into a fine powder, tested and packaged.

Nothing is added to the maca during processing. The finished raw black maca powder remains a single-ingredient product made from 100% black maca roots.

Raw Black Maca vs. Premium Raw Black Maca

Both products are made from 100% black maca roots and both remain in a raw, non-gelatinized form. The difference is how the roots are dried after harvest.

  • Raw Black Maca is dried traditionally in the Andean sun over several weeks.
  • Premium Raw Black Maca is made from fresh roots dried shortly after harvest in low-temperature dehydrators.

The premium drying method produces a stronger, spicier maca with higher glucosinolate levels, while standard raw black maca has the more traditional sun-dried preparation and a somewhat softer, sweeter flavor.
